Are you living your best life?

What does that even mean? Let me break it down: Are you exciting about getting up in the morning? Are you positively impacting people? Is your body healthy, energized, in balance? Are the relationships in your life feeding your energy? Do you practice gratefulness each day? I spent years not being able to answer those questions with a confident YES, dreading Monday mornings, low energy, struggling to make time for me, in relationships that were draining my energy and forcing myself to find things to be grateful for. So what changed? How is it that today I can tell you without hesitation that I AM LIVING MY BEST LIFE? 1.) I took a step back and was honest with my self 2.) I let go of things that were comfortable but no longer serving me 3.) I said YES to the things I wanted 4.) I acknowledged what I truly wanted and jumped in with both feet 5.) I invested in the right support and accountability I am not unique; I didn't have it easier or more money or better 'genes.' I SIMPLY DECIDED I WAS WORTH IT. Easy Energy Vegan Protein Balls


Ingredients:

For the balls:
  • 1 cup lightly packed pitted Medjool dates*

  • 6 tablespoons hemp hearts

  • 3 tablespoons unsweetened cocoa powder or raw cacao powder

  • 2 tablespoons shredded unsweetened coconut

  • 1 tablespoon virgin coconut oil

  • 1/4 teaspoon fine sea salt

  • 3 tablespoons chopped dark chocolate (optional)

  • 1 to 3 teaspoons water, if needed

Topping options:

  • Shredded coconut

  • Hemp hearts

  • Unsweetened cocoa powder or raw cacao powder

  • Melted dark chocolate

Directions:

  1. Place the pitted dates in a food processor and process until a ball forms.

  2. Add the remaining ingredients to the processor and process until thoroughly combined and almost smooth.

  3. Line a plate with parchment paper. Lightly wetting your hands if needed, shape the dough into balls and place them on the lined plate. Roll each ball into your desired topping, I always use shredded unsweetened coconut

  4. Freeze the balls for 20 minutes until firm or simply enjoy right away!

  5. Store the leftovers in the fridge or freezer for a quick burst of energy whenever you need one The balls will keep in an airtight container in the fridge for a week and in the freezer for 4 to 8 weeks.
